I hope you can read Italian. Basically, you dance every night if you want to, but I can't help you with other recommendations. Luca has excellent English, so you might ask him for assistance.
He has info about classes etc. on a website, maybe you can get info about where to go in Rome to dance & find dancing shoes. I've only seen Spanish & Italian on the site, I don't know if they have other language skills.
Many are away from the city and head south for vacation during August, so you may not find a place to dance every night.
