happy (however you spell it) Chanukah

have seen it spelled a jillion ways...would love a tutorial as to why...regardless, joy to all who observe it...

חנוכה
Wikipedia mentions something about the CH spelling being a romanized version of the name. I kind of image the spelling differences would be very much like where ever that phonetic discussion was going on, color vs colour, grey vs gray, spelled vs spelt etc...
 
Multiple English spellings are "correct" (both with "Ch" and with "H") since there is no English equivalent to a "ח" :)
