Someone on another mailing list just informed me that the Irish didn't eat corned beef, that they really had bacon with their cabbage and potatoes.

Me, I like corned beef. I like to eat it with german saurkraut, in fact. Which is fitting on this day, because my ancestry is Irish, Czech, French, and German. I've got all my bases covered food-wise tonight (Czech lager), except for French. Gotta think about that. Maybe I'll serve the potatoes escallope style rather that just boiled.

Or maybe I'll just cook them Yunnan (southern Chinese) style, because that looks like a lot of bland food coming my way.....
 
I had roast beef and turkey on a honey and oat roll with lettuce, spinach, and green peppers. :D

Note: All the veggies were green in honor of St. Pat's Day! ;)
 
There was a chef on the tube this morning cooking some "irish" food on TV and he said the same thing, Laura, that corned beef isn't really "the" meal in Ireland. He made an awfully good looking lamb stew, though! I like corned beef....unless it's cooked 15 minutes too long! *LOL* Then you might as well be eating rubber!
 
May the luck of the Irish be with you (and your dancing) on this beautiful St. Patrick's Day. I'm headed to the salsa club (first time in 3 weeks) and we may negotiate to the Irish pub. I just plan on having a great evening. It's been a long week of empathy and I want to dance.

if you're eating brisket you should make it the day before & reheat it - the texture is SO much better.
