My first canning endeavor (this season) has been a success. It's late in the season, in the Pacific Northwest, so I had many green tomatoes to harvest. I made a batch of Salsa Verde (with green tomatoes, onions, garlic, red and jalapeno peppers, fresh corn, and cilantro). What can I say...but...yummers! I've got so much more to do, but am planning lots of tomatoes and tomatios next year for a triple batch of this deliciousness. I hope I can hold back, not eat it all in a week, and have this for a treat over the winter.
Having my garden has taken a tiny bit away from the pain of not dancing. Hopefully, in the future, I can find a balance in my life, and return to lessons and competing.
I think we've gotten a total of 3 tomatoes this summer from our plant.Our herbs on the other hand are doing amazing.
