Many apologies. I’ve added a link to the rumba specifically. Hopefully I’m able to finally find this song as it’s one of my favourites

It's "African Tango" by Karl Jenkins on the album "Adiemus: Dances of Time" I was able to download it from Itunes about 2 years ago.

I'm looking for the specific version of "Safronia B" used by Brian and Carmen in this iconic jive routine (WSSDF 1999). I've found about 8 versions but none of them sound quite the same.

Shazam said it's the version by The Love Dogs.

That one did pop up, but the recording that I found didn't sound the same as the video. Perhaps the love dogs have multiple versions. More research needed, and thanks for replying!

I would be grateful for help.
Initially, I made the video for Reddit users for a subreddit who are familiar with this and could recognize some tracks, but somehow I couldn't find out anything.

It sounds like it could be one of Brent Mills' original mixes. Your best bet would be to ask him directly.

The easiest way to find modern ballroom music is to search for something like "dancesport waltz" (or whichever specific dance you are looking for) on Spotify. They have plenty of playlists which are used in studios all around the world. Not all the tunes are modern, but there'd be enough of them to not to have to search for too long. You can also check out vendors such as Casa Musica and DSI London: they sell CDs and MP3s; look for the latest releases though, lots of their stuff is straight back from the 70s...
